Broccoli The most common variety of broccoli available in shops is the tight-headed, dark green or purple tinged Calabrese, which has a neat, round head made up of individual florets growing on separate stalks out of the the thick central stem. Broccoli can be steamed or boiled until tender and served as an accompaniment, stir fried or added to Thai style broths. It can also be baked in a cheese sauce, in a similar way to cauliflower cheese. It can also be used in a broth or curries. Broccoli is in season in the Summer and the Autumn. Looks for firm stalks and tightly packed, fresh looking heads.
